What is controlled bottle refermented?

After the beer is brewed and ready for bottling, a secondary fermentation is started by adding additional yeast to the process. Secondary fermentation takes two weeks and is halted by reducing the temperature, the beer is then bottled. The additional yeast is an apparent characteristic and gives additional flavour to the beer. When opening, a slight shaking will release the yeast into the beer to give it the full flavour.
